All in a days work

We have had super stormy weather here in Melbourne. Last night I was going to shut the blinds and happened to look up to be met with the most beautiful rainbow. Photo doesn't do it justice and you can't see the second one to the left very clear in the pic either. I love rainbows :)

 

Baking for lunch box yesterday. This is a creation/adaptation I guess. We have a mandarin tree laden with fruit at the moment so I decided to take advantage of it. Based loosely on the lemon cake recipe I made this:

2 c SF wholemeal flour
1/4c brown sugar
2 eggs
2 tbs butter
grated mandarin rind
enough mandarin juice to make the mixture reasonably runny.

do the whole cream butter/sugar, add eggs and flour etc etc

I used a ring tin as I find for denser type of cakes it works much better.

 

And lastly, Eli-pant. She is about to travel North :)
