Cheesy Veg pie

This is an adaptation from a recipe in The New Moosewood Recipe Book.
And was scrummy as can be, it must have been as Nienna ate the lot and she is a tough one to please. (AA, close your eyes cos it doesn't have meat in it big fella!)


Pie Crust

2 cups of grated potato
1 egg white
salt and pepper.
Grease a pie dish and line with above mixture. Bake at 220c for about 30 minutes then paint with a little oil and bake a further 10minutes.

While crust is baking:

Saute 1/2 onion with garlic and herbs/spices of your choice. Add about 2cups of assorted veg and a couple of tablespoons of water and cover and steam until veg softened.

Line pie crust with grated cheese and then top with veg. Mix 1/4c milk (I use soy) and 1 egg and pour over the top then sprinkle with more cheese. Bake for a further 20 minutes or until set.

btw I AM TELLING THEM IT HAS SALT AND PEPPER IN IT! :P
