Fresh and Fast Friday

I came across a couple of new blogs this week and this is one of them.  I thought I would join in on her link up by sharing a favourite quick recipe we like here.

Veggie Samosa


FILLING
1 onion chopped finely
3 med potatoes that will smash well
1 carrot
1 parsnip
spices to your liking.  We use curry, chilli, garlic, tumeric, cumin and coriander
Whatever other veg you like.
The last ones we made had left over baked veg, peas and brocolli thrown in as well as the above.
Frozen sheet pastry.

1.  steam veg until all soft.
2. Fry onion in a little oil and add spices and other veg.  Fry to bring flavours out and mix through.
3. Cut pastry into desired shape while veg mix cools.
4.  When cool, place a good spoonful of mix on pastry, seal and then shallow fry until golden.  (I use coconut oil for the frying)
5. Drain well on paper towel.
