Frittata Frenzy

We love us a frittata occasionally.  I always forget how good they are and wonder why we don't have them more often every time we have one.


I have no strict rule for making mine.  In fact they are a great way to use up veg that are on their last legs.  This one included:
1 grated carrot
1 grated zucchini
1 onion finely diced
1 grated clove of garlic
1/2 tsp oregano
12 kale leaves finely chopped
1/2 c corn
1/2c peas
1 tomato halved and thinly sliced
4 florets of broccoli quartered
8 eggs lightly whisked
salt and pepper
handful of grated cheese for top

I steam broccoli, corn, peas and kale to partly cook them.  
Then saute onion, carrot, zucchini, garlic and oregano in some coconut oil.  
Add the rest  of the steamed veg and tomato.  
I give a liberal sprinkling of salt and pepper and stir through.
Pour egg mix over and make sure all veg covered.  
Turn heat to low and allow to cook at least 3/4 way through then place under grill to cook the top 1/4.
Add cheese and grill until golden and melted.

We had ours with a green salad and a dollop of sour cream on top!
